Chef’s Note: This is a good dressing to use if your total meal is lacking in fat. You can always take out the oil and add a little water instead.


  • ½ teaspoon extra virgin olive oil
  • 2 teaspoons red wine vinegar
  • 1/8 teaspoon splenda
  • ¼ teaspoon minced shallots
  • pinch kosher salt
  • pinch ground pepper

Nutritional Breakdown:

  • Carbohydrates: 0.5g
  • Fat: 2.3g
  • Calories: 22

Method of Preparation:

  1. Place all ingredients in a bowl and mix well. Toss lettuce in the dressing and serve.
