Despu\u00e9s de haber le\u00eddo sobre ello en libros, prob\u00e9 por primera vez los insectos mientras viajaba por Oaxaca. Cuando me sent\u00e9 a comer los saltamontes asados que hab\u00eda comprado a un vendedor ambulante, me vi rodeada de ni\u00f1os que quer\u00edan com\u00e9rselos, literalmente, de la mesa. Me di cuenta: \"Oye, si a los ni\u00f1os de aqu\u00ed les gusta tanto, \u00a1quiz\u00e1 esto podr\u00eda funcionar de verdad en Estados Unidos!\".<\/p>\n<p><strong>Billy:<\/strong> \u00bfCu\u00e1les son los beneficios nutricionales de los insectos frente a los alimentos tradicionales?<\/p>\n<p><strong>Daniella:<\/strong> Los insectos son sorprendentemente ricos en nutrientes. Cuando menciono esto, la gente dice, s\u00ed, pero hay que comer muchos, \u00bfno? La cuesti\u00f3n es que un pu\u00f1ado de grillos no es gran cosa, y es f\u00e1cil de incorporar a otros platos, igual que la carne. La verdad es que no es as\u00ed. En realidad, la carne cuesta mucho m\u00e1s de lo que pagamos por ella, pero el planeta lo paga caro. Algunos expertos afirman que la industria ganadera contribuye m\u00e1s al calentamiento global que el sector del transporte. Mientras tanto, los oc\u00e9anos est\u00e1n sobreexplotados, e incluso la soja tiene sus inconvenientes, con el tema de los fitoestr\u00f3genos. As\u00ed que los insectos, que pueden criarse de forma humanitaria en grandes cantidades y con un m\u00ednimo de recursos, son realmente una gran alternativa.<\/p>\n<p><strong>Billy:<\/strong> Digamos que alguien est\u00e1 dispuesto a intentarlo.  \u00bfQu\u00e9 tipos de insectos le recomendar\u00eda a alguien para empezar?  Ya sabes, \u00bflos m\u00e1s f\u00e1ciles para empezar?<\/p>\n<p><strong>Daniella:<\/strong> El insecto m\u00e1s f\u00e1cil de descubrir es probablemente el grillo, porque la gente suele tener una opini\u00f3n razonablemente buena de \u00e9l. Adem\u00e1s, tienen sabor a gamba y nuez y son muy vers\u00e1tiles; se pueden moler para hacer polvo si no se puede manipular el exoesqueleto. Si una persona es un poco m\u00e1s atrevida, recomiendo encarecidamente empezar con una larva como el gusano de cera, porque son peque\u00f1os, innegablemente sabrosos y no tienen un exterior crujiente.<\/p>\n<p><strong>Billy:<\/strong> Mis amigos que probaron sus recetas con insectos en la conferencia del ISSN en Las Vegas me hablaron maravillas. S\u00f3lo necesitas aceite de oliva, sal, ajo machacado y un pu\u00f1ado de grillos frescos congelados. Calienta el aceite y empieza a saltear los grillos. Cuando empiecen a estar dorados y crujientes, a\u00f1ade el ajo machacado y sal al gusto.
